Ingredients:
Chicken Wings 10 pc
Ginger 2 slices
Fine Shrimp Sauce 1 1/2 tbsp
Soy Sauce 1 1/2 tsp
Rice Wine 1 tsp
Sugar 2 tsp
Chili Powder 1/4 tsp
Water 1 tbsp
Apricot Jam 1 tbsp
Directions:
1. Put chicken wings and ginger into a pot, cover with room temperature water.
2. Cook over med-low heat until water almost comes to a boil.
3. Drain chicken wings then cover with cold water and let cool.
4. Pat chicken wings dry with paper towel.
5. Add fine shrimp sauce, soy sauce, rice wine, sugar and chili powder to
chicken wings and mix well.
6. Cover with cling film, marinate chicken wings in refrigerator for at
least 2 hours.
7. In a frying pan, heat oil on med-high heat.
8. Add chicken wings, pan-fry until golden, 1 - 2 mins each side.
9. Add water to remaining marinade and mix well.
10. Add half of the marinade-water to the pan, cover and cook over low
heat for 2 mins.
11. Flip chicken wings over, then add another half of the marinade-water, cover and cook for 2 more mins.
12. Brush both sides of wings with apricot jam, pan-fry slightly.
Remarks:
- If your apricot jam is too thick, put into a microwave oven and heat
for 10 seconds before using.
